Peppermint Oreo cheesecake cupcakes are simple, delicious

These cheesecake cupcakes are easy to make, and they are delicious.
Ingredients
- Two blocks of softened cream cheese
- 1/2 cup sugar
- Two eggs
- One container of Yoplait Greek 100 vanilla
- 14 oreos
- Peppermint extract
First you want to preheat your oven to 350 degrees.
The next step is to combine the sugar and cream cheese in a bowl or a stand mixer. Mix until smooth.
Then you add the Greek yogurt and mix until smooth.
Add the eggs one at a time, mix until smooth, but don’t overmix.
Take two cookies and smash them up in a plastic bag and add the crumbles to the mixture.
Add 10-15 drops of peppermint extract and stir the mixture until combined.
Next you can line your cupcake tin with festive liners and put one cookie at the bottom of each liner.
Then scoop the mixture into the liners, filling them almost to the top.
Once this is done, you’re ready to bake.
Put them into the oven for 23-26 minutes. You will know they are ready when they puff up like a muffin and are cracked on top.
When you take them out, the cupcakes will fall as they cool and will have more of a flat top like a cheesecake does.
